Roasted Tomato Sauce

This is the easiest homemade tomato sauce recipe and so so good! A few simple, inexpensive ingredients and very little active cooking time. This tomato sauce makes a great addition to all kinds of dishes and freezes well in a freezer zip-top bag.

Ingredients:

  • 10-14 Roma tomatoes (depending on size), washed and quartered
  • 1 bulb of fresh garlic, peeled
  • 1 medium yellow onion, cut into chunks
  • Salt
  • Pepper
  • Italian seasoning
  • Balsamic vinegar
  • Avocado oil

Instructions:

  • Preheat oven to 425 degrees Fahrenheit.
  • Place tomatoes, garlic, and onion on a large, rimmed baking sheet.
  • Season tomato mixture with salt, pepper, and Italian seasoning. Drizzle with balsamic vinegar and avocado oil. Toss to coat. Turn tomatoes skin side up.
    • Note: the above step are ingredients best measured with your heart.
  • Roast for 45 minutes.
  • Let it cool for 15-20 minutes.
  • Place all ingredients in a blender or food processor and blend until smooth.

We have used this sauce on pasta, homemade gluten free pizza, and even a delicacy of chicken nugget parmesan.
